COUNTRY-STYLE GROUNDHOG RECIPE FROM WWF "KITCHEN NEWS"
Ingredients:
7 individual groundhogs
1/2 Cup Flour
1/4 tsp Salt
1/4 tsp Pepper
1/4 tsp Soda
1/4 tsp Cooking Oil
1/2 tsp Sugar
Prepare groundhog by removing the samll sacs in the back and under the forearm. Soak groundhog overnight in salted water. This will help remove the gamey flavor. Combine flour, salt, pepper, and soda: use as a rub on the groundhog. Brown the groundhog in hot oil in the skillet, and sprinkle with sugar. Reduce heat, add 1-1/2 cups of water. Cover and simmer for about 30 minutes or until tender. Remove cover : let cook for an additional 10 minutes. Time to dig in and eat.
HONEY-FRIED WALLEYE FILLETS
Ingredients:
8 Large Walleye Fillets
2/3 Cup Oil
1 tsp Honey
1 Egg Sightly Beaten
2 Cups Crushed Ritz Crackers
1/4 Cup Flour
1/2 tp Salt
1/4 tsp Pepper
1/8 tsp Nutmeg (optional)
Directions:
Dry fillets on paper towel. Heat oil in a 10 inch skillet. Mix honey and egg together. Combine dry ingredients. Dip fillets in egg mix and then coat with cracker mix. Fry unit golden brown on each side. about 3 minutes. Time to get out the plates and eat.
