BAKED WHITEFISH

Ingredients:   2 lbs. Whitefish Fillets,  1/8 tsp. Pepper,  1  Egg White,  1/2 tsp Salt,  1/4 Cup  Mayo,
1/4 tsp.  Dill Weed,  1/2 tsp. Onion Juice or 1 tsp. Grated Onion,  OPTION: Fresh Dill or Lemon Wedges.

Directions:  Please fish in a greased 13 X 9 baking dish. Beat egg white with salt until stiff peaks form.  Gently fold in mayo, dill and onion juice. Spoon over fish..  Bake Uncovered at 425*F for 15 to 20 minutes or until topping is puffed and fish flakes easily with fork. Be care not to Over cook. Can serve with dill and lemon.
